One Pot Drunken Pasta

We've all seen those videos that have been spamming our social media of super delicious meals practically made in 30 seconds. The video catches your attention by putting together a beautiful meal so quickly and seemingly easily that you're left wanting to immediately recreate the recipe at home. Well, that is how exactly how I came across the idea of this dish: drunken pasta. I'll be the first to admit that anything with wine in the recipe, I'm sold! (Pour some in the pan, pour more in my glass!) After searching the internet and reading various alterations to the recipe, I created one that I adore. What I love most about this dish is truly how simple it is to make. You literally put everything into one pot and let the stove take over on the rest of the job! It is easy and mess free, plus it elevates your typical pasta dish and looks super sophisticated (which is always a bonus if you have company over!)
Cooking Time: 15 minutes
Yields: 2 servings
INGREDIENTS
8 oz. pasta (I used linguine but you can use fettuccine, angel hair, etc.)
1 garlic clove, minced (if you are using pre-minced garlic, 1/2 teaspoon)
2 tablespoons onion powder*
1 teaspoon basil
1/4 teaspoon bay leaves
1/4 teaspoon crushed red pepper
1 tablespoon olive oil
1 1/4 cups chicken stock (you can also use vegetable stock)
1 cup red wine
1/3 cup water
salt & pepper
1/4 cup Parmesan cheese
*I do not like the texture of onion in my food but I like the flavor, so I use onion powder as a substitute for actual onion. If you would like to incoprorate actual onion into this dish, use 1/2 small white onion.
INSTRUCTIONS
1. Mince/cut the garlic (and onion, if using actual onion.)
2. Add all ingredients to a large pot (except the Parmesan cheese) and bring to a boil. I normally snap my pasta in half so that it all fits in the pot and everything is fully submerged.

3. Reduce heat to a simmer and cook for an additional 10 minutes, stirring occasionally.

4. Plate and top with salt, pepper & Parmesan cheese. Eat alone or pair with your favorite protein!
