One Pan Garlic Ranch Chicken & Veggies

Ever come home from a busy day at work or have had such a long day that by the time dinner comes around you find yourself thinking "Oh *#$@!?" This recipe takes an already super easy dinner idea and kicks it up a couple of notches. Notch 1? Regular chicken and veggies are transformed with the simple flavors of garlic and ranch. Notch 2? It is cooked entirely on one pan, so no need to worry about cleaning up a messy kitchen afterwards! Your family (and your sponge) will be thanking me later!
Cooking Time: 30 minutes
Yields: 2 servings
INGREDIENTS
2 boneless, skinless chicken breasts
2 medium potatoes, halved and quartered
8 carrots, peeled and cut into equal sizes (You can also use baby carrots for convenience if you have them!)
2 tablespoons olive oil
1/2 packet of ranch seasoning (I put the rest of the seasoning in a zip lock bag to save for another time)
2 cloves garlic, minced (If using pre-minced garlic use 2 teaspoons)
2 tablespoons parsley
Salt & pepper
DIRECTIONS
1. Preheat oven to 400 degrees.
2. Place potatoes, carrot and chicken breasts onto a baking sheet coated with non-stick cooking spray.

3. Drizzle olive oil over chicken and vegetables.

4. Sprinkle salt, pepper, garlic and ranch seasoning on top. *You can use the back of a spoon to evenly spread the mix over the chicken once you are finished, but it is not necessary.
5. Cook for 30 minutes. Serve & enjoy!
