One Pan Foil Baked Tilapia & Veggies

My Daddy used to (and still does) make the BEST foil baked fish I've ever had. I'm not sure what exactly makes it so darn tasty, but it is. The ingredients and recipe are both so simple and clean (and easy!) The lemon and tomato cook together with the garlic and the fish in little foil packets to help keep the fish moist and full of flavor!

*For this particular recipe I decided to use tilapia, but you can apply this cooking style to almost any other type of fish that you like!

Prep Time: 5 minutes

Cooking Time: 20 minutes

Yields: 2 servings

INGREDIENTS

Fish

Aluminum foil

2 filets of tilapia

2 teaspoons olive oil

2 cloves of garlic, minced

1 lemon, thinly sliced

1 tomato, thinly sliced

Salt & pepper

Vegetables

2 medium cooking potatoes, cut up

1 large zucchini, cut up

2 tablespoons olive oil

1 clove of garlic, minced

Salt & pepper

DIRECTIONS

1. Preheat oven to 450 degrees.

2. Lay each piece of tilapia on top of a piece of foil. Drizzle olive oil over each filet. Season with salt, pepper & garlic. Finish off by placing sliced tomatoes and then sliced lemons on top.

3. Wrap foil around the fish to make a little packet. This doesn't have to be perfect, BUT liquid will be produced during the cooking process so make sure that the edges of the foil are turned up to catch the juices.

4. Season your vegetables by placing them in a bowl, drizzling olive oil on top and add garlic, salt & pepper. Toss the bowl around a few times to evenly disperse and lay vegetables on baking sheet.

5. Place foil packs on baking sheet. Bake for 20 minutes.

6. Divide the vegetables onto plates and remove the tilapia from the foil packets. If desired, pour the cooking liquids from the packets over the fish and vegetables for added flavor. Enjoy!
