Shepherd's Pie

Cooking Time: 20 minutes
Yields: 6 servings
INGREDIENTS
1 1/2 lbs. ground beef
2 cloves of garlic, minced
3 tablespoons tomato paste
1 cup beef broth
1 cup red wine
2 tablespoons Worcestershire sauce
2 tablespoons onion powder
1 cup sliced carrots
1 cup frozen peas
2 4-oz. packages instant mashed potatoes
1 egg, whisked
1/2 cup shredded Parmesan cheese
Parsley, for sprinkling
Salt & pepper
DIRECTIONS
1. Preheat oven to 400 degrees.
2. In a large pot, brown ground beef on medium high heat. Add garlic and saute for a couple of minutes. Add tomato paste, onion powder, Worcestershire sauce, beef broth and red wine. Stir until combined and cook until liquid begins to boil.

3. Add carrots and peas. Cook for 10 minutes.

4. While beef filling is cooking, boil your water for mashed potatoes and cook them according to the directions on the bag.
5. Pour beef filling into an ungreased 9 x 13 casserole dish. Top with mashed potatoes. Spread mashed potatoes so that they evenly cover the entire dish.
6. Brush egg over mashed potatoes. Sprinkle on parsley, Parmesan cheese, and salt & pepper to your liking.

7. Place in oven & bake for 20 minutes, or until cheese is golden brown.

8. Slice, serve & enjoy!
