Spaghetti Squash

A delicious, healthy and carb-free alternative to noodles or pasta as a side dish!
Prep Time: 5 minutes
Cooking Time: 30 minutes
Yields: 2 servings
INGREDIENTS
1 small spaghetti squash
2 teaspoons olive oil
2 tablespoons butter
2 garlic cloves, minced
2 tablespoons parsley
1 teaspoon garlic powder
2 teaspoons red pepper flakes
Salt & pepper
1/4 cup Parmesan cheese
DIRECTIONS
1. Cut spaghetti squash in half, long-wise. Scoop out and discard the seeds and loose pulp in the middle.

2. Drizzle olive oil over both sides and season with salt & pepper according to your taste.

3. Place spaghetti squash, one half at a time, in the microwave for 12 minutes (If you get a larger spaghetti squash it may require a few more minutes on each half.) Allow them to cool for a few minutes before continuing as the skin will be very hot.
4. In a pan, melt butter with garlic, parsley, onion powder and red pepper flakes on medium heat.
5. While butter is melting, use a fork to shred the insides of the spaghetti squash. (If you find it hard to shred the squash, it may need more time in the microwave. A fully cooked spaghetti squash will come apart fairly easy.)

6. Add spaghetti squash to the pan and toss around so that everything is evenly coated. Let cook for a couple of minutes before adding Parmesan cheese. Toss again, let cook until cheese is melted and enjoy!
