Gnudi

Gnudi are gnocchi-like dumplings made with ricotta cheese rather than potato and are jam-packed with cheesy flavor! Because they are made with very little flour, they are lighter and less chewy than gnocchi. Add in some spinach and you've got yourself a delicious and easy to make make meal!

Prep Time: 10 minutes

Cooking Time: 4 minutes

Yields: 2 servings

INGREDIENTS

1/2 cup cooked spinach, squeezed dry of moisture

1/2 cup whole milk ricotta cheese

1/2 cup grated Parmesan cheese

1 egg

1 egg yolk

4 tablespoons flour, plus 1 tablespoon for coating

1/2 teaspoon salt

1/2 teaspoon pepper

DIRECTIONS

1. Bring a pot of salted water to a boil.

2. In a large bowl mix spinach, ricotta, Parmesan, egg, egg yolk, flour, salt & pepper.

3. Set in freezer for 5 minutes to harden and make molding easier.

4. Mold mixture into small balls and coat in flour. Shake off excess flour.

5. Place gnudi in boiling water (be sure not to overcrowd the pot!) Gnudi will float when they are cooked (about 2-3 minutes.) Remove with slotted spoon and plate.

6. Serve with a sprinkle of Parmesan cheese or a little of your favorite tomato sauce and enjoy!
