Zuppa Toscana

Prep Time: 5 minutes

Cooking Time: 30 minutes

Yields: 5-6 servings

INGREDIENTS

1 lb. ground spicy (or sweet) sausage *I find it difficult to find ground sausage while I'm shopping, so what I normally do is just buy the big containers of fat sausage links and empty the ground sausage from the casing around it. I do this by pinching and twisting each sausage link and the center and squeezing in an outward direction on both ends until the ground sausage comes out. Normally 4-5 links is about 1 lb.

2 large potatoes, thinly sliced (or 4 smaller potatoes) *If you have a food processor or mandolin, they help out a lot with the slicing!

3 tablespoons onion powder *I do not like the texture of real onion so I use onion powder as a substitute. If you choose to use onion, use 1 whole onion cut up.

2 garlic cloves, minced

2 cups chopped kale

4 cups water

1 cup heavy cream

2 cups (or 2 8oz. cans) chicken broth *I also find it a pain in the butt to have so many cans of various broth around my house all the time and I use it constantly, so I buy bouillon cubes instead. They are super simple to use in recipes and take up way less space in the cabinet, plus they are cheap! (About $3 for a whole container of them!) If you chose to do this, just use 1 cube every cup of water you use. So for this recipe, use 2 cups of water and 2 chicken bouillon cubes.

Salt & pepper to taste

DIRECTIONS

1. In a large pot, brown sausage on medium heat. Use spatula or utensil to break the sausage into tiny pieces. Add garlic and sauté for 2-3 minutes.

2. Add chicken broth and water. Bring to a boil.

3. Add potatoes and onion powder. Cook on medium heat until potatoes are cooked (about 10 minutes.) Add salt & pepper to taste.

4. Reduce heat to low and add kale. Stir

5. Add heavy cream, stir and let simmer for another 5 minutes.

6. Serve with some crusty bread or sprinkled with Parmesan cheese & enjoy!
