Grown Up Mac & Cheese

Who doesn't love a really good mac & cheese? This recipe takes a beloved childhood food and elevates it with more "grown up" ingredients! It is super cheesy but absolutely delicious!
Prep Time: 10 minutes
Cooking Time: 25 minutes
Yields: 3-4 servings
INGREDIENTS
2 tbsp. olive oil
3 cloves of garlic, minced
1 bag fresh spinach, washed
1 jar artichoke hearts, rinsed and chopped
2 1/2 cups penne pasta (or your favorite pasta type)
3 cups milk
2 tsp. salt
2 tsp. pepper
2 small chicken breast, cooked and cut up (or shredded)
2 oz. cream cheese, brought to room temperature
1/2 cup shredded Mozzarella cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Parmesan cheese
DIRECTIONS
1. In a large sauté pan, sauté garlic in olive oil for 2-3 minutes on medium-high. Add entire bag of cleaned spinach, stirring occasionally until all of the spinach has wilted down. Add chopped artichoke hearts and stir, allowing pan to sauté another 2-3 minutes.
2. Slowly add milk, salt & pepper and bring to a boil.

3. Add pasta. Simmer on medium heat until milk has reduced to a glaze.

4. Add chicken and cook for an additional 2-3 minutes.

5. Add cheese and stir until all of the cheese has melted and all of the pasta is evenly coated.
6. Serve & enjoy.
